Lemon Blueberry Loaf

Here is an easy loaf cake recipe that is perfect for a get-together. It uses a cake mix, pudding, and blueberries.

Lemon Blueberry Loaf Quick Bread

When I was planning a recent luncheon, I wanted a simple lemon dessert. I searched Pinterest and came across this Lemon Blueberry Quick Bread recipe from Six Sisters’ Stuff. It was perfect because it’s so easy to make.

Lemon Blueberry Loaf

1 white cake mix
1 package lemon instant pudding mix
1 cup water
4 eggs
½ cup vegetable oil
1 cup fresh blueberries
1 cup powdered sugar
3-4 tablespoons lemon juice

Heat oven to 350 and grease 2 loaf pans. Mix the first 5 ingredients for 2 minutes on medium speed. Fold in the blueberries. Divide the batter into the 2 loaf pans and bake for 40-50 minutes. Let cool then remove from pans. Mix the powdered sugar and lemon juice and glaze the loaves.

This is such a great quick bread recipe. I love the lemon flavor and the tang that is added by the glaze.
