For the past 10 days I’ve been back on the low carb bandwagon. I’m keeping a log of everything I consume, which is helping stay on target. Low carb meals are easy to come up with, but I struggle with snacks. I’ve come up with a few that I will be showing you over the next few weeks.

Ants on a Log (celery with peanut butter & raisins) is a healthy snack, but I was looking for a lower carb alternative to raisins. My daughter was eating raspberries, so I thought why not?!
Such simple ingredients: celery, peanut butter, and raspberries
Verdict: It’s delicious!!!
