Check out this easy Shepherd’s Pie recipe that is made with leftover roast. It goes together quickly and tastes amazing!
I love Shepherd’s Pie, but my family isn’t thrilled with it. I wanted to make some a few weeks ago and decided I needed to change up the classic recipe so that my family would eat it. Not only have I created a version that my family loves, it’s so easy to make. It is our current favorite standby in our home.
This semester I make a crock-pot meal on Monday nights. I have to drive ballet carpool and I get home later than normal. I always hit Sam’s on Monday morning to get food for the week. That means I get a big hunk of meat to cook. So much meat means we have leftovers. This recipe is created using that leftover beef. If you want to make it for yourself, plan ahead and get a huge roast that will result in leftovers.

- frozen vegetables

Isn’t that easy? I think I had about 3-4 cups of leftover roast that I used in this recipe. The roast may be leftover, but there is NEVER any leftovers of his dish. We practically fight over the seconds. I’ve made it with roasts prepared with different ingredients. Once it was a soda roast and other time it was a beef version of my Balsamic Rosemary Chicken recipe. If there is a lot of sauce on the beef, I just rinse it a little before placing it in the casserole dish. It tastes amazing every time!
