Chinese New Year is just around the corner and I have a delicious Asian-inspired fried rice for you. Celebrate the Year of the Monkey with this quick and easy recipe.
Our family enjoys observing Chinese New Year each year. We celebrate with a big feast of Asian foods. We also partake in several Chinese traditions, such as giving out red envelopes with money inside. February 8, 2016, begins the Year of the Monkey. I’m giving my daughter some adorable monkey themed red envelopes and a stuffed monkey. I buy her a new stuffed animal each year to correspond with the zodiac animal. She’s excited about the Year of the Monkey because that means her year is next!
Our new years feasts includes both traditional and non-traditional Chinese dishes. We always have noodles for long life and oranges for good luck. This year I’ve made a Pineapple Cashew Shrimp Fried Rice, which has many symbolisms. Pineapple is said to bring wealth luck. Shrimp represents happiness and good fortune. Cashew represents money or gold. Rice represents fertility, luck, or wealth.
- Minute® White Rice
- 2 tsp of Sesame or Peanut Oil (not pictured)
- 3 cloves of garlic
- 1.5 tsp of ginger paste
- 2-3 carrots diced
- 4 green onions chopped
- 2 cups shrimp
- Dole Pineapple Chunks
- 1/2 cup cashews
- 2 T of Kikkoman Soy Sauce
- juice of 1/2 a lime
- 1+ tsp chili paste
Here is our entire feast. In addition to the Pineapple Cashew Shrimp Fried Rice, we enjoyed bok choy, fried dumplings, lo mein noodles, Crab Rangoon, and oranges.
Our family gobbled the fried rice all up. The heat of the chile paste balanced well with the pineapple. While you could use any size shrimp, I prefer the small ones.
I picked up the ingredients for this recipe at Walmart.
