Here is a fun and easy Patriotic Poke Cake that is perfect for your Independence Day or other patriotic celebrations.
It is that time of year. Summer is kicking off and people are searching online for fun red, white, and blue food to bring to holiday parties. I have a fun jello poke cake that is perfect for any summer celebration.
The whipped topping frosting with fruity stars and stripes makes for a light dessert that will be loved by all. A small food cookie cutter is used to make stars out of strawberries.
Patriotic Poke Cake Recipe
What is awesome about this recipe, is the ingredients are very simple. You might even have them on hand already.

We took this to a Memorial Day barbecue and people thought it looked good. Once we cut into it, everyone wanted some. It had a fun marbled look inside. We used blue raspberry and cherry gelatin and you could taste both. It was delicious!
- white cake mix
- eggs, oil, water as per mix directions
- red box of gelatin
- blue box of gelatin
- whipped topping
Bake your cake in a 9x13 glass dish according to the directions on box.
Let the cake cool for at least 30 minutes.
Mix each packet of gelatin separately with 1 cup of boiling water. Stir well. I added a few drops of blue food coloring to my blue gelatin to make it darker.
Poke holes in the cake every inch or so with the end of a wooden spoon.
Use a medicine dropper or similar tool and generously drop gelatin in each hole.
Add color to every other hole.
Frost with softened whipped topping.
Cut the strawberries so that they are not too thick.
Use a mini star cutter to make berry stars.
Cover and refrigerate at least 2 hours before serving.
Get creative with your berries and make a flag or any other fun design!
