Like all of us, I am a busy person. I am married, I have three children, and I work from home. My day is spent juggling my schedule, taking my daughter to her activities, running the household, and getting exercise. I am committed to a healthy lifestyle and getting at least 10,000 steps every single day. This daily goal includes weekends, holidays, and in all weather conditions. No matter what, I am going to get my steps in each day.

Daily Exercise Goals

Many days it is a challenge to get all that walking in. I never have a chump of time open that allows me to do all the steps at once so I have to break them up and do shorter walk segments throughout the day. When I have a heavy workload or the family’s schedule is full, I have to squeeze in steps whenever I can get them.

I use a fitness tracker to record my steps. It is how I hold myself accountable. The tracker that I wear on my wrist vibrates once an hour to remind me to get up and get moving.

Meal prep on those very busy days is also a challenge. I’m always seeking out easy meal solutions that are healthier and that my family will like. Instead of eating out or grabbing take out, I come up with quick and easy meals at home. It is important to me that my family eats well, so I plan healthier meals that are not difficult to make.

Easy Meal Solutions

Sam’s Club is where I shop for a lot of the food that my family eats. I go weekly to pick up produce, dairy, frozen foods, and more. Sam’s Club offers me many options for meal planning at a value.

Every day for lunch, I have a bagged salad that I pick up at Sam’s Club. I often add a little something extra to these tasty salads. Sometimes it is seed or fresh fruit and sometimes it is chicken strips. These boneless, skinless strips of chicken are very tasty. They are precooked, so all you have to do is heat them up in a skillet or microwave. They are ready to eat in a few minutes. Chicken Patty Parmesan is another easy meal solution for busy families.

We also use chicken strips in our dinner. We have become big fans of soup. These perfectly seasoned strips of meat are the perfect addition to many of our soups.

White Chicken Chili Recipe

Easiest soup that I make is a white chicken chili because I use a seasoning mix. I put the white chicken chili seasoning mix into a pot, along with water, white beans, a can of diced tomatoes, and grilled chicken strips.  This soup is great by itself, but we like to top it with strips of tortilla or sour cream.

White Chicken Chili

White Chicken Chili

Create this easy soup in under 30 minutes.

Prep Time 5 minutes
Cook Time 20 minutes
Additional Time 5 minutes
Total Time 30 minutes

Ingredients

  • 1 white chicken chili seasoning mix
  • 4 cups of water
  • 3 cans of great northern beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup of grilled chicken strips
  • optional toppings: sour cream, shredded cheese, tortilla strips

Instructions

Mix the seasoning mix and water in a medium soup pot.

Add the beans to the pot.

Dump the entire can of diced tomatoes into the pot.

Heat up the chicken strips according to the package directions.

Break the chicken into bite-size pieces and add to the soup.

Heat the soup until over medium heat for 10 minutes.

Serve with your favorite toppings.
