It seems that camping as a plant-based vegan could be a challenge, but we have seamlessly made the transition. For weekend camping we often make our meals ahead of time and heat them up at the campsite or use shelf-stable vegan meals.
For longer trips, we prepare meals at the campground. Our favorite method is cooking over the campfire. We recently made this soup over the fire in our Dutch oven.
Dutch Oven Jackfruit Vegetable Soup Recipe
Jackfruit is a great meat substitute. It has a mild taste that takes on the flavor of other ingredients. Since we use canned jackfruit that comes in pieces, we do not chop it up for this soup.

How to Make Vegan Camping Soup
- Peel and chop the vegetables
- Make the vegetable broth
- Combine all the ingredients into a pot over the campfire
- Cover and cook until the vegetables are tender
Campfire Soup Tips
Head up the soup stock and add the root or heartier vegetables first. We will chop ours a little smaller and let them stew in the broth for a bit before adding the other ingredients.
Chop vegetables at home for quick preparation at the campground.
After an active day out at the campground, we like to pair this soup with a hearty loaf of bread.

Dutch Oven Jackfruit Veggie Soup
Create this vegetable soup with jackfruit in your Dutch oven at home or on your next camping trip.
Ingredients
- carrots
- potato
- sweet potato
- mushrooms
- celery
- parsnip
- onion
- garlic
- green beans
- diced tomatoes
- green jackfruit
- vegan vegetable bullion
- water
- soy sauce
- thyme
- bay leaf
- red pepper flakes
- salt & pepper
Instructions
- Peel and chop the vegetables.
- In the Dutch oven, combine the bullion and water to make the vegetable stock.
- Combine all the ingredients into a pot over the campfire.
- Cover the pot and cook until the vegetables are tender approximately 45-70 minutes.
Notes
Cut the heartier vegetables into smaller pieces and/or add them to the stock before the rest of the ingredients so they can soften up.
