Blueberry Pineapple Angel Food Muffins

As I told you last week, my friends and I get together each week for a TV viewing party. A few of my friends are on Weight Watchers, so they are keeping track of all the points they eat. Instead of bringing over my normal type desserts, I am focusing on skinnier options this month.

They loved the Healthier Peanut Butter Cookies that I brought last week. This week I have a yummy berry pineapple angel food cake dessert that is super easy and tasty. The blueberries can be substituted for any fresh berry. This recipe is only 1 point per muffin.

Blueberry Pineapple Angel Food Muffins

These angel food muffins only require three ingredients. You just need canned pineapple, an angel food cake mix, and some fresh blueberries. How simple is that?

Mix the pineapple and the angel food cake mix. Do not drain the pineapple!

Fold in the blueberries and put the batter into a lined cupcake tin.

The batter for these muffins smelled so good! I just wanted to lick the whole bowl.

They were just as delicious cooked. This recipe makes quite a lot since nearly half the muffin liner is filled with berries.

I created 24 and had about half the batter left. The extra batter was put into a loaf pan without the blueberries and it was super light and tasty too. This was so good, so I will be making this again soon.

I love the guilt-free feeling associated with eating these yummy muffins. I am not on Weight Watchers, but I do love this recipe!

BONUS: Chocolate Angel Food Cake
Here is another skinnier dessert recipe for you. This one mixes chocolate in with an angel food cake mix.

Ingredients
Angel Food Cake Mix
1/4 cup unsweetened baking chocolate
12 oz diet soda

Instructions
In a large bowl, stir the cake mix and chocolate together.
Slowly pour the diet soda into the mix and stir until well combined.
Pour the batter into two loaf pans, which have been greased ahead of time.
Bake for 30-40 minutes at 350 degrees.

I’ll be the first to say that this isn’t the prettiest dessert I’ve ever seen, but it tastes better than it looks. My friends liked it, although they ended up pulling it apart as opposed to cutting it. One slice is approximately 1+ point. I myself prefer the angel food cake made with the crushed pineapple. It’s just moister. I might try making this same recipe again, but substitute a can of crushed pineapple for the diet soda pop.

Ingredients

  • angel food cake mix
  • crush pineapple, 20 oz can
  • fresh blueberries

Instructions

  1. In a large bowl, stir the cake mix and complete can of pineapple until completely combined.
  2. Line cupcake pans with cupcake liners.
  3. Put fresh berries in the bottom of each liner.
  4. Spoon batter on top.
  5. Bake for 15 minutes at 350 degrees.
