Layered Lemon Tres Leche Poke Cake

On Monday evenings a group of my friends meet to watch The Bachelor or Bachelorette. We don’t watch because we believe that this is true love, but we make fun of the crazy train wrecks that go on the show. I’ve had a lot of fun trying/creating new recipes this summer as we watch. Some have been so-so and some have been fantastic, like this cake. It’s a layered lemon tres leche poke cake. Can you say that 10 times fast?

Layered Lemon Tres Leche Poke Cake

lemon cake mix
oil
eggs
water
lemon
evaporated milk
1 cup heavy cream
sweetened condensed milk
whipped topping
1/2 cup powdered sugar

Directions: Mix the cake mix according to directions on the box, but add an extra egg and cut back on the water a little bit. Stir in some lemon zest. Pour into 2 round cake baking pans and bake in 350 degree oven for 25-28 mins. Let them cool fully. Remove from pans and cut off top to level off for layering and return to pans. Poke holes in each cake and pour the evaporated milk, heavy cream, & condensed milk into the holes. I used 8″ pans so I didn’t end up using the whole can of the condensed milk. Place cakes in refrigerator to chill for an hour. Mix the defrosted whipped topping with a 1/2 cup powdered sugar. Add the juice from one lemon & some lemon zest. Let it chill in the fridge with the cakes. Take them all out and place one of the cakes on a cake plate and add some frosting.

Place the other cake on top and frost completely.

Top with thin slices of lemon if desired. Store in refrigerator.

Feedback: I didn’t make this early enough, therefore didn’t have time to chill the frosting to thicken or let the whole thing chill long enough. My frosting was kind of running off. I had to transport it to our friend’s house which contributed to the running off.
